Meet our Associate Winemaker, Justin Knight!
What first attracted you to winemaking?
Making wine is a perfect balance of Art and Science. I've always been interested in chemistry and creating things with my hands. Wine production was the ideal industry for me. As my experience grew in the cellar, my appreciation for wine turned in to a passion.
What is your winemaking philosophy; that is, what are you trying to achieve with your wines?
I would characterize my winemaking style as an Old-world approach. Filled with tradition and simplicity. While using new age techniques to ensure great, high quality wines.
What is the most important factor in making a great wine?
Each Harvest / wine we produce bring their own unique challenges during the winemaking process. Generally, the most important factor in creating a great wine starts in the vineyard. High quality fruit is the foundation we need to make great wines.
Which of our current wines are you the most excited about?
One wine that I'm constantly excited about at Danza, would be our estate Sauvignon Blanc. We have some of the oldest Sauv Blanc vines in southern California. Every year I'm blown away at the quality of wine that comes from these vines.
What are your expectations for the 2018 harvest?
With the 2018 harvest fast approaching, we are excited to announce that all of our wines will be made with 100% Temecula valley fruit. We believe in our winemaking region and look forward to showing the quality it can produce.
